>I am really getting into this OAMC! Today I decided to do stuff with potatoes, 3 different ways: Twice Baked Potatoes, Mashed Potatoes and Potato Skins.

Start off by baking 10lbs of washed and pricked potatoes at 450º for 1 hour. Place them on a cookie sheet before sticking in the oven for easy handling.

After potatoes have cooled cut each one in half and scoop out inner pulp leaving a ledge around the sides and bottoms of shell. Reserve insides for mashed potatoes.

Make mashed potatoes by adding milk, butter, salt and pepper to potatoes. Once it is mixed thoroughly add cheese and green onions and mix again. Fill 1/2 of your potatoes (using the larger sized potatoes) with mashed potato mixture.

Fill cupcake tins with remaining potato mixture to make individual servings of mashed potatoes.

With the remaining half of the potatoes, fill with cheese, partially cooked bacon and green onion. (don’t cook bacon all the way or it will be overcooked during re-heating)

Leave them on cookie sheets and place in the freezer for at least an hour. Once frozen place in ziplock bags. Mashed potatoes will pop out of muffin tin to have individual servings. For the potato skins, place flat in a zip lock bag so as not to disrupt fillings.

to reheat:

potato skins – bake at 350º for 10-15 minutes until cheese is melted and bacon is browned

mashed potatoes – heat each serving in microwave for 1-2 minutes

twice baked potatoes – bake at 350º for 15-20 minutes until heated through or 3-4 minutes in the microwave.

total normal cost of items:

$2.50 per each 5 lbs potatoes (used 10 lbs total)
$1.20 for each cup of cheese (used 3 cups total)
$2.50 for 1 lb bacon (used 1/2 lb)
$1 for green onions

this averaged 20¢ per serving (also made 4 baked potatoes when we first started)
